I have a little secret to let you in on… you can have fun, tropical drinks at any time of year. At least if you live in the western world, where we have access to the global food chain!
Basically, I am giving you an excuse to go create one of these deliciously refreshing pineapple rum cocktails, no matter if it’s thirty below, or a hundred degrees (Fahrenheit, of course).

We have already talked about how I absolutely love Malibu rum, and basically my alcohol consumption is like that of a teenage girl.
Why? Because it tastes good! So does this cocktail. I mean, it’s a delicious rum cocktail *because* it’s full of Malibu and other fruity delights.
If you make up a batch of these and give them to friends, they are going to burst out in smiles. Look at them! They are the embodiment of happiness!
Malibu Rum and Pineapple Juice (AND MORE!)
Now, you’ve probably already had the delight that is Malibu rum and pineapple juice. Now it’s time to level up your game by adding more delicious fruit… basically a Malibu rum punch recipe!
Malibu Rum Punch Ingredients
Okay technically this is a rum punch, but when I picture punch, I think of a gigantic punch bowl at an event.
I picture a whole lot of work. This is an easy recipe to make a cocktail... you only need to make one. Or two. Or three. Ahem.
If you have a good grocery store, you’ll be able to pick up the fruit purees, that make this drink both delicious and a stunning colour.

These are actually wonderfully easy to make.
First, put 1/2 oz (or so) of the strawberry puree into the bottom of each glass.
Second, in a cocktail shaker mix together 4 oz mango puree, 4 oz pineapple juice, 4 oz Malibu pineapple rum and 4 oz Malibu coconut rum.
As you can tell, the math is really hard here. Use 1 oz of everything, per person, to change the cocktail recipe size.
With the orange layer mixed together, slowly pour it into the glasses, so it sits on top of the red layer, creating the nice sunset look.
Finally, top off with soda water and a beautiful skewer of bright fruit.
Serve to very appreciative guests, with a smile on your face because it looks so good.
Pineapple Rum Cocktail
Makes 4 servings
Pour ½ oz of Strawberry Puree into 4 glasses.
Fill a large shaker with ice and add the next 4 ingredients.
Shake well and pour slowly over the Strawberry Puree.
Top with enough Sparkling Water to fill the glass and garnish with pineapple, strawberry, or anything else you’d like!
