How About a Cucumber Coconut Lime Mocktail?

We love having the option to throw together a mocktail version of any drink when guests are over. Whether they aren’t drinking for personal reasons or underage it’s always nice to be able to serve them a fun drink.

To turn this Margarita into a mocktail you will need to omit the silver tequila and orange liqueur. All other ingredients for this recipe can remain the same. For replacing your tequila you have two options: one, get yourself some non-alcoholic tequila. This will keep the tequila flavor in the drink without the alcohol content. Two, you can use ginger ale or just regular soda water. This is the best option if serving underage guests.

When it comes to replacing your orange liqueur we suggest orange juice. Taste test before adding as orange juice is sweet, you may one to try only 1 oz and 1 oz water or soda water for this one.

Can You Make This Drink Slushy?

Absolutely! We love a good slushy margarita! You have two options to turn your Margarita into a slushy. You can blend up your ice with your liquids in a blender to create a slushy, this works really well.

If you happen to have a margaritaville you can also use that to create this drink. Another option is placing your coconut water, lime juice, and even your cucumber and lime slices all in the freezer.

Once they are frozen enough you can mix it up and add your other ingredients. This still works great and makes a great option if you don’t happen to have a blender or margaritaville on hand.

Toasted Coconut Tips

One of the ingredients listed is toasted coconut for the rim. For this you can hit up the baking section and grab some sweetened or unsweetened coconut (we prefer sweetened).

Place on a frying pan on low and toast them slightly, keep an eye on it! You can also put parchment paper on a baking sheet and pop in the oven as well. Another option you can use is pre toasted coconut that can also be found in most baking sections. If you really want to go fresh, grab a full coconut and shred some coconut and toast it up!

All these options will taste delicious and add a nice tropical treat.

Ingredients:

  • 3-4 slices cucumber
  • 3-4 slices of Lime
  • 4 oz silver tequila
  • 2 oz orange liqueur or triple sec
  • 2 tsp agave syrup
  • 1 tbsp toasted coconut, in cocktail
  • 1 tbsp minced mint
  • ½ lime juice
  • 6 oz coconut water
  • Tajin,or margarita salt, glass rim
  • Mint sprig, lime wedge or cucumber slice as garnish

Directions:

  1. Rim a glass with Tajin or margarita salt if desired.
  2. Add the cucumber, and limes to an ice filled glass.
  3. Add the toasted coconut, mint, tequila, orange liquor, lime juice, coconut water, and agave to a shaker.
  4. Shake to combine.
  5. Pour into your glasses
  6. Garnish and enjoy!
