Perfect for Fall: Pumpkin Spice Latte Jello Shots

There’s something about pumpkin spice that just puts you instantly in the fall mood! Throw in pumpkin spice baileys and coffee and you have the PERFECT cool fall evening shot to serve. Obviously every pumpkin pie inspired shot needs whipped cream on top!

If you really feel like getting fancy, sprinkle some cinnamon or pumpkin pie spice on top!

Non-Alcoholic PSL Treat Option

We love a good mocktail and non-alcoholic option when having any type of get together. That way everyone can enjoy your delicious creation. To turn this shot into a regular Pumpkin spice latte remove your pumpkin spice baileys and add ½ cups of whole milk with 1 tsp of pumpkin pie spice mixed in.

Taste test before and feel free to add more spices if you wish. This will create a very similar taste for everyone to enjoy, now if you plan to serve these to kids repeat what we just did but remove the coffee!

We don’t need kids staying up all night because they had your pumpkin treat. You won’t need to replace this one if you don’t want to, you can consider adding more milk or add some chocolate milk to add more sweetness to it. Feel free to experiment!

What Can I Use Instead of Canned Pumpkin or Pumpkin Spice Baileys?

We have a few suggestions for alternatives when it comes to this recipe. If you happen to have pumpkin puree in your freezer from growing pumpkins feel free to use that instead of canned pumpkin! Just note that pumpkin puree tends to have a higher water content, have some pumpkin spice on hand and add a little to your puree.

If you are unable to track down Pumpkin Spice Baileys (it’s seasonal and only around a short time) you can use regular baileys with 1 tsp of pumpkin pie spice instead.

Taste test, and feel free to add more if you desire.

Pumpkin Spice Latte Jello Shot Recipe

Yields: 12
Prep Time: 15 min
Chill Time: 2 hours
Total Time: 2 hours and 15 minutes

Ingredients:

  • 1 cup cold Water
  • 4 packages of unflavored Gelatin
  • 2 cups boiling Water
  • 2 cans of Sweetened condensed milk
  • 1 tsp. Vanilla extract
  • 1 tbsp Canned Pumpkin Pie filling
  • ½ cup Pumpkin Spice baileys
  • ½ cup chilled Coffee
  • Whipped Cream

Instructions:

  1. In a medium sized bowl add 1 cup cold water and gelatin packs.
  2. Whisk to combine.
  3. Set to the side for 7 minutes.
  4. Add the boiling water to the gelatin.
  5. Whisk until dissolved.
  6. Add the sweetened condensed milk, vanilla extract, pumpkin pie filling, coffee, and pumpkin liquor, to the gelatin mixture.
  7. Whisk until combined.
  8. Set to the side for 15 minutes.
  9. Pour into your plastic portion cups until full.
  10. Refrigerate for 2 hours
  11. Top with Whip Cream
